No-prepare dinner watermelon 'pizza' with fig, feta, and raspberry dressing - Telegraph.co.uk

This might sound a bit of bonkers, nonetheless it is a perfect vegetarian and gluten-free treat for a summer time backyard celebration.

SERVES

2 as a prime or four as a starter

ingredients

For the dressing

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 100g raspberries
  • For the pizza

  • 2 round watermelon slices, about 20cm in diameter, 2cm thick
  • 2 ripe yellow, orange or red tomatoes, thinly sliced
  • 2 sparkling figs
  • 100g feta
  • 50g pitted black olives, halved
  • 25g roasted hazelnuts, roughly chopped
  • small handful of fresh mint leaves
  • small handful of clean wild rocket
  • system

    To make the dressing, whisk together the oil and vinegar in a small bowl.

    Add the raspberries and whisk them in gently except they're roughly beaten. Season.

    remove any seeds from the watermelon slices, if you opt for. spread them with half the dressing. arrange tomatoes in a single layer across the watermelon slices, then cut every one into six wedges.

    location the items returned together on serving plates. reduce each and every fig into six wedges and prepare them on the pizzas.

    crumble feta over the top. Dot with olives and drizzle with the ultimate dressing. Scatter over the hazelnuts, mint and rocket.

    Serve directly. Meat eaters can add ruffles of Parma or serrano ham.
